I absolutely LOVE Tania Hubbard who has two beautiful books Gluten Free Grain Free and Abundance. Both books share this amazing recipe and I have to say if you are a bread lover and looking for a gluten free, grain free, yeast free, dairy free and sugar free version then this is your loaf! It is heavenly and incredibly filling and tasty!
Ingredients
- 1 cup almond meal
- 2Tbsp chia seeds
- 30ml water
- 3/4 cup arrowroot or tapioca
- 1tsp bi-carb (baking soda)
- 2Tbsp apple cider vinegar
- 3 eggs
- pinch salt
Method
Preheat oven to 175degrees celsius.
Soak chia seeds in water whilst preparing dry mix in a bowl. Stir to make sure chia seeds are in the water and clump free.
Sift arrowroot and bi-carb into the bowl.
Add almond meal and salt and mix well.
Use whisk to combine the dry ingredients to break up any lumps and distribute ingredients evenly.
Add eggs, soaked chia seeds and apple cider vinegar.
Combine everything until there are no lumps.
Pour into a prepared rectangular shaped tin.
Top the mixture with dried or fresh herbs, crushed garlic, tomato and olives. You can add grated cheese if you would like also.
Bake for 20minutes or until the bread bounces back when lightly pressed in the middle.
Leave in tin for a few minutes before turning out onto a wire rack. Once cooled you can cut into 6 slices and store in a plastic bag in the freezer.
It is a quick option for a lunch or snack on the run.
You can fill this with anything you love!
