This amazing array of delicious foods is the perfect start to the day for Dad’s and big boys too! It is quick to prepare, smells sensational and will keep them going for hours. Filled with nutritious foods including ample protein, quality fats and plenty of greens – along with a little fermented foods and you will not be disappointed.
Ingredients
- 2 organic eggs, whisked
- 2 rashers of nitrate free bacon
- Mushrooms, finely chopped
- Spinach
- Avocado, sliced
- Holoumi cheese (optional)
- Kimchi
- Parsley, chopped
Method
Place bacon into a warm pan and allow to cook in its own fat. Chop mushrooms and add to the pan with a little extra butter or macadamia oil if needed. Whisk the eggs and place into a separate warm pan with a little butter or macadamia oil. Stir eggs occasionally to scramble. Meanwhile keep stirring the mushrooms allowing them to cook through also. As soon as mushrooms are cooked move to one side with the bacon to keep warm and add the holoumi cheese (if dairy is ok) and cook quickly on both sides. Meanwhile place a bed of spinach onto a plate. Place cooked eggs on top of the spinach, serve the mushrooms, bacon and holoumi around it. Slice an avocado and serve on the side with a little kimchi. Sprinkle with parsley, salt and pepper and serve with a Blueberry Smoothie!
