Ingredients200g coconut butter – homemade (see below) or from health food store
2 drops Orange oil
50g Changing Habits cacao nibs, chopped and or grated (or raw cacao nibs, or 2Tbsp cacao powder)
20g shredded coconut or coconut flakes
140g cranberries, sultanas, currents and or goji berries (I prefer cranberries & sultanas!)
60g raw or activated almonds, lightly chopped
30g raw or activated sunflower seeds
Method
Line baking tray with paper. Place 200g coconut butter and all remaining ingredients into mixing bowl and mix through until a wet sticky consistency is achieved. Get your hands in there if you fancy! Spread and flatten onto baking tray. Place in freezer for 20mins or until coconut butter solidifies, then gently break apart with your hands into clusters. Store in air tight container in freezer. If this is not sweet enough, you could add 2Tbsp of honey or maple syrup or even a few drops of stevia, but I found the coconut butter made it plenty sweet enough!
To make coconut butter place 400g dessicated coconut into Thermomix and blend 2mins on speed 8 or until a paste like consistency is achieved. Scrape down the sides with spatula. Add 30g coconut oil and blend 1 minute on speed 5-8 gradually increasing speed. Scrape down sides and repeat as necessary to achieve a nice smooth consistency. Store in jar in cool pantry.
