This is a quick simple recipe to make up over the festive season when guests arrive unexpectedly or you want a tasty healthy meal in a hurry. It is tasty, healthy and I personally love it served with loads of green veges or a big raw salad. It’s even heavenly as a brekky!

INGREDIENTS

  • Large bunch coriander
  • Fresh chopped chilli
  • Few cloves garlic
  • 2 Tbsp Lime juice
  • 4 Tbsp Sesame or coconut oil
  • Pinch salt

METHOD

Put all ingredients in a blender and whiz to a thickish paste. Pour over chicken thighs and leave to marinate. The longer the better! BBQ on high heat. Serve with lots of greens! Enjoy!
