Ingredients
This exquisite moist and incredibly delicious cake is quick and simple to make. It is whole food, gluten-free, grain-free and can be dairy-free. This makes quite a large cake so enjoy every mouthful!
Cake
- 8 free-range eggs
- 375g butter or coconut oil if you would like it to be dairy free
- 10 cacao wafers
- 1 cup honey
- 1 cup coconut flour
- 1/4 cup cacao powder
- 2tsp bicarb soda
- 2tsp vanilla powder or vanilla bean paste
Chocolate Frosting
- 200g coconut oil
- 10 cacao wafers
- 150g avocado (2-3 large)
- 1Tbsp cacao powder
- 1/3 cup raw honey
Method
Preheat oven to 180 degrees Celsius.
Gently melt butter (or coconut oil) and cacao wafers together in pot on stove stirring occasionally. Meanwhile place eggs into a separate bowl and whisk together. Add in dry ingredients and combine well. Add melted butter and cacao mixture and ensure it is all combined well. Pour batter into a greased and lined tin evenly. Bake for approximately 35-40minutes or until a skewer comes out clean. Allow to cool to room temperature.
To make the Chocolate Frosting melt cacao wafers in a double boiler. Add coconut oil and blend together until smooth. Add remaining ingredients and mix well. Place in refrigerator for 10minutes and then whisk again until it has a butter-like consistency.
When cool cut the cake in half and spread about a third of frosting, replace the top, spread the remainder over the whole cake!
Serve with poached pear and coconut ice cream like here or with cacao nibs, toasted coconut flakes and fresh strawberries.Inspired by Kehoe’s Kitchen
