We love peppermint and always serve our chocolate peppermint cake at many of our events. This is another great peppermint recipe!

Ingredients

Plain Biscuits

  • 2 cups Spelt Flour or 1 3/4 cups Wholemeal SR Flour
  • 3 teaspoons Baking Powder (omit if using SR flour)
  • 1/3 cup of Oil (your choice) or 1/3 cup butter
  • 1/2 cup Rapadura Sugar
  • 1 Egg

Method

The peppermint balls can be made with any plain biscuits however we make our own.

So we’ll give you the biscuit recipe first in case you want to use it!

Since we only want the mixture to crush for the balls what I do is mix all ingredients together (after making a well with dry ingredients and adding the rest) and press into slice tin. Bake at 180degrees for 20 minutes or until golden.

To make the balls you crush the cooked biscuit mixture and add 2-3Tbsp raw Cacao Powder (or Cocoa), a few drops peppermint essence, about 1/4 cup coconut and oil or butter and soya milk.

Can’t tell you the exact amounts!! It doesn’t really matter – just taste it and if it needs a bit more of something then just add it. You just need enough oil and milk to make it bind together enough to make into balls. Roll in coconut and chill.
