This delicious power-packed health bar is the perfect lunch box or snack treat! My daughter makes this every week and says it gives her great energy when at school and also as a pep up at her dance classes! It is easy to make, sensationally tasty and so good for you!

INGREDIENTS

  • 140g almonds
  • 100g cashews
  • 150g SuperSeed (or mixture of various nuts & seeds roughly ground together)
  • 50g dessicated coconut
  • 120g coconut oil
  • 120g almond butter
  • 30g honey
  • 2Tbsp chia seeds
  • 70g cranberries
  • 4drops Orange essential oil

METHOD

Place almonds & cashews into Thermomix or Food Processor and process until desired consistency. Add Superseed mix or all other nuts/seeds & pulse 4-5 times until coarsely ground – nicer to be chunky!

Stir through dessicated coconut. Melt coconut oil & stir in honey, salt & orange oil. Pour into nut & seed mix, & add cranberries until well combined!

Spoon into lined baking tray & smooth out with spoon or spatula. Refrigerate a few hours then slice into even sized pieces. Store in fridge or freezer! Perfect healthy snack!
