This exquisite dish was inspired by my beautiful friend Helen Paradin from Noursh-ed. It is perfect to prepare in advance so you have a quick healthy tasty meal ready and waiting when you are on the run. It will also become more like a Bircher Muesli when you do which gives it a yummy twist too!
INGREDIENTS
- 1tsp cinnamon
- 1tsp allspice
- 1/2 c shredded coconut
- 1 cup almonds, walnuts, pumpkin seeds, sunflower seeds (in whatever ratio you prefer)
- 1 cup yoghurt (coconut or dairy or coconut kefir)
- 1/2 lime or lemon juiced
- 1 drop orange oil
- 1 carrot, grated
- 1 apple, grated
- 2Tbsp chia seeds
- 1 cup fresh or frozen berries of choice
METHOD
Place cinnamon, allspice, coconut, nut and seed mix into a baking tray and bake on 180degrees celsius for approximately 10-15mins or until golden brown. Remove from oven and let cool.
Place grated carrot and apple into a bowl and add lime or lemon juice and orange oil and mix together.
Gently heat berries in a saucepan until nice and sauce like.
Now layer your glasses with carrot and apple mix, nut mix, a few chia seeds, yoghurt and topped off with berry sauce. Repeat.
Indulge and enjoy straight away or save in the fridge until hungry!
