One of my most favorite Spring recipe’s comes from a gorgeous friend Luke Hines. The Raw Chocolate Berry Cheesecake is a divine raw treat. It is seriously a conversation stopper and an ideal dessert if you want to wow your dinner guests.

This recipe has been slightly adapted from Luke’s amazing book ‘Eat Clean’.  I hope you enjoy this whole lot of yumminess, it really is something else.

 Base

90g pitted medjool dates

200g (2 cups) almonds (or pecans)

3 Tbsp desiccated coconut

60g (1/2 cup) cacao powder

1Tbsp maple syrup

1Tbsp coconut oil melted

1tsp ground cinnamon

1tsp vanilla essence

 

Berry Cheese Filling

320g (2cups) macadamia nuts soaked 2-4 hours or overnight and then drained and rinsed

250ml (1 cup) vanilla almond milk

125ml (1/2 cup) coconut oil, melted

70g coconut butter

1tsp vanilla essence

3Tbsp maple syrup

250g mixed berries fresh, or frozen and thawed

 

Method

Line a 22cm fluted tart or pie tin with baking paper.

Place all base ingredients in a food processor or Thermomix and blend on high speed until mixed to a wet-like crumb mixture.

Press the mixture into prepared tin and transfer to the freezer for ten minutes to form up.

Now onto the filling. Place all ingredients (except the berries) into a food processor or Thermomix and blend on high speed until smooth and free of lumps.

Remove the tin from freezer. Pour the filling over the base and spread evenly. Scatter berries over the filling pressing some into the filling. You can sprinkle cacao nibs or toasted desiccated coconut over the top too. Return to the freezer for two hours to chill and set.

Remove the cheesecake from freezer and let sit for 20-30mins before serving. Slice with a hot knife.
